When I am low on energy and cooking inspiration, I tend to make meatballs, kabobs or keftas. I found this recipe and knew I wanted to try it. It's a quick, easy dinner that made great leftover too. Serve this with plain or herbed rice. I also enjoy having a tomato cucumber salad or yogurt with cucumber.

New York Times Turkey Chili
I have been embracing chili this winter. It's such a great meal on a cold day, and makes for the best leftovers. I personally think it tastes even better on day 2. Adding a bunch of toppings makes this feel like a full meal.

Leftover Turkey or Chicken Enchiladas
It's not an uncommon thing for me to have leftover chicken in my fridge after a lazy rotisserie chicken dinner or roasting chicken at home. I first found this recipe after Thanksgiving, when here was a plethora of leftover turkey but nobody wanted to eat plain turkey anymore. But it works great with any leftover poultry. Or you can buy a rotisserie chicken and make this recipe for a quick dinner.

Turkey Meatball Gyro
When I was in Denver visiting my sister I looked for a few quick and easy recipes that were still kid friendly. I found this recipe and decided it would be a great one to try. The meatballs and the yogurt sauce are easy to make and can be prepped earlier in the day. My 2 year old nephew loved the meatballs and yogurt sauce, while my sister and I made the full gyro with all the toppings and enjoyed those too. This is a very easy recipe and if you have any leftovers, they will still be great the next day.

Turkey Cacciatore
I've recently been eating what I consider lazy day meals (baked potato with cheese, pasta, etc...). Finally, after a week of my all-carb diet, I went out and bought tons of produce, meat, and other delicious things I had forgotten about. After coming home with a seemingly random mix of supplies, I realized I had everything to make this recipe, thanks to a quick google search.
This is a great, easy cacciatore recipe. The ingredients are simple, fresh, and come together perfectly in this Italian classic. The fresh basil is a must and adds more depth to the dish' overall flavor. You can use chicken or turkey, whichever you have at home will be good. I suggest eating this straight away, but leftovers will still be good the next day.

Roasted Turkey Breast with Rosemary-Mustard Butter
Roasting a turkey breast is a great alternative to making an entire Thanksgiving turkey, especially if you are cooking for a smaller group. Not only does this bone-in turkey breast turn out juicy and tender, but you won't get stuck eating turkey for the week following Thanksgiving. Don't get me wrong, I love everything about a Thanksgiving feast (minus the pumpkin pie), but when there is still leftover turkey in the fridge 2 nights after the holiday, I start to get bored. If you are having a small Thanksgiving this year, consider just making part of the bird. With the breast, you can still carve it up (or in my family's case, hack it up) and feel like you're having a special meal.
If I ever feel like having turkey any other time during the year, this is my go-to recipe. It's easy to make, has simple ingredients, and tastes great every time. The fresh rosemary add a subtle, but wonderful flavor to the turkey and the butter helps keep the meat moist. Serve this with your favorite side dishes and some gravy for a scaled down Thanksgiving dinner. I made this with roasted potatoes since I love dipping crunchy potatoes into gravy (I swear, it tastes good). The asparagus was added to this meal as a last minute addition from the farmer's market and was also just roasted with some salt, pepper, and olive oil.
