Stovetop Apple Crisp


As the weather cools and cozy desserts are back in season, I started looking for a quick, easy apple recipe. This apple crisp was simple and is perfect for 2 people. This is a great way to make a much smaller version of this amazing autumn treat.

For the topping:
2 tablespoons butter or vegan butter
2 tablespoons brown sugar
1-1/2 tablespoons pure maple syrup
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
pinch of salt
scant 3/4 cup old fashioned oats
1/4 cup sliced almonds
 
For the apples:
2 tablespoons butter or vegan butter
1 tablespoon brown sugar
1/2 teaspoon cinnamon
2 medium-sized Granny Smith apples (or any apple variety), peeled and cut into bite-sized pieces, about 2 cups
 
For serving:
ice cream, whipped cream or custard
 
Heat a medium sized skillet over medium heat. Add the butter, brown sugar, maple syrup, vanilla, cinnamon, and salt, stirring until melted and bubbly. Mix in the oats and almonds, stirring often until mixture is fragrant and slightly toasted, about 4-5 minutes. Scrape mixture onto a silicone mat or parchment paper then set aside to cool.
 
Next, prepare the apples by adding butter, brown sugar, and cinnamon to the same skillet. Mix until melted and bubbly. Add apples then turn the heat down slightly and sauté for 2 minutes. Cover the skillet with a lid and cook, stirring occasionally, until apples are tender but still have a little crunch in the middle, 3-5 more minutes.
Once the apples are done, spoon the apples into bowls then top with your favorite crisp topping and serve.
