Indian Spiced Roasted Cauliflower


This cauliflower recipe has become my new favorite weeknight side dish. The recipe is easy to follow and packs in a ton of flavor. Serve alongside Indian Cilantro Chicken or Chicken Tikka Masala.


1 head cauliflower, cut into florets
4 tbsp olive oil
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon turmeric
1 teaspoon salt

Preheat the oven to 400F/200C. Line a baking sheet with parchment paper, or grease it. In a small bowl mix the cumin, coriander, turmeric, and salt. Put cauliflower in a large bowl and drizzle with oil. Sprinkle the spices over the cauliflower and mix to evenly. Spread the cauliflower in a single layer on the prepared baking sheet. Roast for 25-35 minutes, until the cauliflower is cooked and the edges are golden brown.
