Easy Chicken Quesadillas


I had some leftover rotisserie chicken at home and wanted to make something with the leftovers since I'm never a fan of reheated rotisserie. I often go from my green chile and chicken enchiladas but wanted to try something new. I found this recipe and had everything on hand already. This is a very easy recipe and leftovers can be reheated in a toaster over the next day for an equally great meal. Serve with your favorite condiments, such as guacamole, salsa and sour cream.

Makes 6 quesadillas


2 cups shredded cooked chicken
2/3 cup salsa
1/3 cup sliced green onions
3/4 to 1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon dried oregano
6 flour tortillas (8 inches)
1/4 cup butter, melted
2.5 cups shredded Monterey Jack cheese or Mexican cheese blend
Guacamole, Salsa, and/or sour cream, for serving


In a pan, combine the chicken, salsa, green onions, cumin, salt and oregano. Cook for 10 minutes, until the chicken is heated through.

Preheat your oven to 350F/176C. Using 2 baking sheets, brush one side of each tortilla with melted butter and place it butter side down on the baking sheet. Spoon 1/6 of the chicken mixture on to half of each tortilla. Sprinkle 1/6 of the cheese on top of the chicken.Fold the tortillas in half, folding the plain half of the tortilla over the cheese. Bake for 9-12 minutes, until the tortillas are golden brown. Once done, cut in to wedges and serve with your favorite condiments. Pin It Now!
