My mom found this recipe a while back and recommended it. These patties make a great vegetarian dinner option, especially if you're still on board with Meatless Mondays. I tend to eat lighter meals in the evening, so a dish like this is a great choice. The patties are also easy to make. They may seem a little difficult to work with, but once they patties begin to fry they stick together.
Recipe from The Kitchn
For the patties:
1 (15-ounce) can garbanzo beans (chickpeas), drained
and rinsed
1 medium sweet potato (about 8 ounces), peeled
1/2 medium yellow onion
1/4 cup panko breadcrumbs
1 large egg, lightly beaten
2 cloves of garlic, minced
2 tablespoons fresh parsley, finely chopped
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
3 tablespoons vegetable oil (or any oil you use for frying)

the yogurt sauce:
1/2 cup plain Greek yogurt (or strained plain yogurt)
1 1/2 teaspoons Sriracha hot sauce
1/8 teaspoon ground cumin
1/8 teaspoon fine salt
1/2 cup plain Greek yogurt (or strained plain yogurt)
1 1/2 teaspoons Sriracha hot sauce
1/8 teaspoon ground cumin
1/8 teaspoon fine salt
To make the patties, pour the garbanzo beans into a large bowl.
Using a potato masher or the back of a fork, smash the garbanzo beans until
they are no longer whole. Using the small holes of a box grater, grate the
sweet potato and add to the garbanzo beans. Using the larger holes of your box
grater, grate the onions and add to the garbanzo beans. Next add the panko,
egg, garlic, parsley, salt, cumin, and paprika. Mix the ingredients together
until combined.
The mixture will be delicate to work with,
but scoop about ¼ cup of the mixture into your hands and form into a 1/2 inch
thick patty. They should be 3 inches wide. Continue with the rest of the
mixture.
Using a nonstick frying pan over medium
heat, warm up half of the oil. Once hot, add half of the patties to the pan and
fry until golden, about 3 to 5 minutes per side. Set aside the completed
patties and continue frying the rest of them.
In the meantime, prepare the yogurt sauce.
Combine all of the ingredients together. Add more seasoning if desired.
When complete, serve the hot patties with
the dipping sauce.
