Arugula Pesto


I got a little excited last weekend at the farmer's market and bought way too much produce. Half way through the week I realized there was no way I'd be able to finish up all the arugula I bought before it wilted. I thought about making an arugula pesto and came across this recipe. It had a few more steps to it than many other, where the arugula is not blanched. However, i liked the idea of taking some of the kick out of the arugula. This pesto goes great on pasta, spaghetti squash or as a pizza sauce.

Salmon Souvlaki Bowls


I made this recipe one night when I wanted to attempt a healthier dinner after a few days of eating terribly. I found this recipe and thought the idea of a "bowl" for dinner sounded great. Though couscous is not exactly the healthiest thing, it's still better than lots of other options- and this was delicious. I set up a build-it-yourself style dinner with all the bowl condiments in a line and everyone built their bowls how they preferred them. Personally I love tzatziki and would use more than most people, so I made more than the recipe asks for. You can't ruin this recipe and feel free to adjust based on your preferences. The fish turns out very flavorsome and your can grill it to your preferred level of doneness (I like mine still slightly rare on the inside).

Frozémonade


I've been wanting to make frozémonade all summer. For some reason or another, it never worked out, until now. We happened to ave all of the ingredients at home and decided it was time to try the ultimate hipster/bougie summer drink. This beverage is not very strong, so it actually makes a great addition to any brunch, BBQ, etc... The simple syrup is very easy to make, so don't be intimidated by that. Serve frozémonade immediately for the best slushy factor, but feel free to prep the simply syrup and juiced lemons ahead of time.

Peanut Butter Chocolate Chip Energy Bites


I finally decided to try making energy balls after reading about them all summer long. Turns out these are extremely easy to make and they are surprisingly filling and satisfying. I loosely based this recipe on the Trader Joe's recipe from their ground flax seed, but there are tone of variations that can be made to this. You can substitute maple syrup for the honey. You can used dried cherries or raisins instead of chocolate chips. Feel free to tweak this recipe however you'd like, just don't stray too far from the wet and dry ingredient proportions.

Fresh Spinach Frittata with Cheese


Earlier this summer my mother decided to make this dish as a light dinner. None of us were particularly hungry, but a frittata sounded great. Often I am not impressed with frittatas and find them a little boring. The cheese in this recipe definitely adds a lot of flavor and also changes the texture of the frittata. This is a little more dense than your usual frittata, but is still absolutely delirious. I love this dish both hot or at room temperature. The ingredients are simple and the end result makes a great vegetarian dinner. Pair with a green salad and you have a terrific weeknight dinner.
