Peanut Butter Chocolate Chip Energy Bites


I finally decided to try making energy balls after reading about them all summer long. Turns out these are extremely easy to make and they are surprisingly filling and satisfying. I loosely based this recipe on the Trader Joe's recipe from their ground flax seed, but there are tone of variations that can be made to this. You can substitute maple syrup for the honey. You can used dried cherries or raisins instead of chocolate chips. Feel free to tweak this recipe however you'd like, just don't stray too far from the wet and dry ingredient proportions.


Adapted from Trader Joe's

1 cup rolled oats
1/2 cup chocolate chips
1/2 cup ground flaxseed meal
1/2 cup unsweetened coconut flakes
1/2 cup crunchy peanut butter
1/3 cup honey
1 teaspoon vanilla extract

Mix all the ingredients together thoroughly. Roll in to 1" or 1.5" balls. Lay out the energy balls on a baking sheet and freeze for an hour, or until set. Keep in your fridge for up to 2 weeks.
