Peanut Butter Chocolate Chip Energy Bites
I finally decided to try making energy balls after reading about them all summer long. Turns out these are extremely easy to make and they are surprisingly filling and satisfying. I loosely based this recipe on the Trader Joe's recipe from their ground flax seed, but there are tone of variations that can be made to this. You can substitute maple syrup for the honey. You can used dried cherries or raisins instead of chocolate chips. Feel free to tweak this recipe however you'd like, just don't stray too far from the wet and dry ingredient proportions.

Caramelized Onion Tart
I was visiting my sister earlier this year and we decided to make this onion tart. Though caramelizing onions takes a while, the rest of the recipe looked easy enough. We made it simpler by using a store bough pie shell, but feel free to use the link to the original recipe for the homemade dough recipe. Once the onions are caramelized, this recipe comes together very quickly and easily. I ended up cooking this in stages and the end result was still delicious. We served this quiche with a big green salad and were absolutely stuffed. If you're a hungry group, this feeds about 3 people.

Soft Baked Oatmeal, Walnut and Chocolate Chip Cookies
I absolutely love soft baked oatmeal cookies. I was looking for a new oatmeal recipe to try when I came across this one. With a few tweaks here and there I ended up with delicious, chewy cookies. I don't think you can go wrong with this recipe. I love having these cookies with a giant glass of milk or cup of tea. This recipe made over 60 cookies, so I tend to share these with friends or coworkers when I make them.
