Lantana's Honey-Ginger Salmon


This salmon recipe is packed with flavor! The ingredients combine some classic Asian ingredients (hoisin sauce) with Latin ingredients (chipotle chilies). A few years ago I was making salmon fairly regularly, and for some reason I just got tired of it. This recipe has reminded me why salmon makes such a great dinner option. This is a great weeknight dinner option since it's very simple and quick to make. The restaurant which created this recipe, located on the British Virgin Islands, serves these with banana fritters. As delicious as that sounds, I have always enjoyed this salmon with just about any side dish.


Recipe from Lantana's Restaurant

6 tablespoons honey
1/4 cup chopped fresh cilantro
1/4 cup hoisin sauce
1 1/2 tablespoons minced fresh ginger
1 tablespoon chopped chipotle chilies
1 tablespoon brown sugar
1/2 to 1 tablespoon mild oil
4 8-ounce salmon steaks, about 1 inch thick

Preheat your broiler. In the meantime, mix together the honey, cilantro, hoisin, ginger, chilies and brown sugar. Brush the salmon steaks with oil and sprinkle with salt and pepper. Next, brush the salmon with the honey-ginger glaze. Broil the salmon until cooked to your desired doneness or until the center of the salmon is opaque, about 4 minutes per side). Baste the salmon occasionally while broiling. Remove from broiler when done, transfer to a plate and serve. Pin It Now!
