Easy Gluten-Free Banana Pancakes


I don't know if I'd call these banana pancakes or banana crepes, but either way this make a delicious and very easy breakfast. The pancakes are a little difficult to flip since they're much more delicate than a pancake made with flour. The smaller you make these, the easier this will be. I accidentally overcooked mine, hence the slightly too brown picture, but they still tasted great. I topped mine with honey but they are just as good plain or with maple syrup. In the version picture I did not use baking powder. This recipe makes breakfast for one person.



Adapted from All Recipes

1 banana
2 eggs
1/4 teaspoon cinnamon
1/8 teaspoon baking powder (option, use for fluffier pancakes)
1 to 2 tablespoons coconut oil
1 teaspoon honey

In a bowl, mash the banana. Add the eggs and whisk together. Mix in the cinnamon and baking soda.

heat a pan to medium high heat. Add some coconut oil to grease the entire surface. Add small round of batter to the pan and cook until done. Be careful when flipping as these pancakes have a tendency to break. Don't worry, even the ugly ones still taste great.

Top with honey and enjoy warm. Pin It Now!
