Roasted Asparagus with Parmesan Cheese
It's asparagus season in Switzerland. For 2 or 3 months, fresh asparagus is available where I live, any other time of the year you can forget about finding it. I've kept it simple this time and had a delicious side dish ready to serve in under 30 minutes. My mom often makes her asparagus in a similar style and they're always a hit. And as always, some freshly grated cheese only makes the meal better.
2 pounds fresh asparagus, washed and tough end of stems removed
1 to 1/2 tablespoons olive oil
salt and pepper, to season
1/2 cup freshly grated Parmesan cheese, loosely packed
Preheat your oven to 400ºF/200ºC. Line a baking sheet with parchment paper.
Place your prepared asparagus on the baking sheet. Drizzle with oil and sprinkle with salt and pepper. Toss fo coat evenly. Bake for 20 to 25 minutes, until asparagus is almost fully cooked. Remove from oven and sprinkle the Parmesan over the asparagus. Place back in the oven for another 3 to 5 minutes until cheese just melts. Pin It Now!
