Cilantro Lime Chicken Thighs

Chicken thighs are my go-to weeknight dinner protein. The chicken can be prepped the day before and then cooked when you're ready. This recipe was approved by all ages when I made this for a family dinner.

Pepperoncini-Feta Turkey Meatballs

When I am low on energy and cooking inspiration, I tend to make meatballs, kabobs or keftas. I found this recipe and knew I wanted to try it. It's a quick, easy dinner that made great leftover too. Serve this with plain or herbed rice. I also enjoy having a tomato cucumber salad or yogurt with cucumber.

New York Times Turkey Chili

I have been embracing chili this winter. It's such a great meal on a cold day, and makes for the best leftovers. I personally think it tastes even better on day 2. Adding a bunch of toppings makes this feel like a full meal.

Spicy Miso Chicken Katsu Ramen

This recipe has been passed along time and time again. My sister's friend shared it with her, she shared it with our mom, and my mom shared it with me. It's a quick and easy dinner option you can make in under an hour.

Easy Enchiladas

Enchiladas are a great idea when you're short on time or have leftover ingredients to use. This works great with leftover chicken or a rotisserie chicken. You can also use leftover turkey. Feel free to sub cubed roasted sweet potatoes for the chicken to make the dish vegetarian. To keep this as simple as possible, I used pre-made enchilada sauce.

Mongolian Beef

Mongolian beef is an easy weeknight dinner that tends to be a crowd pleaser. The ingredients are easy to find and the flavor is fantastic. Leftovers reheat well, and I have even frozen this when I have made too much for grab and go lunch options later in the month. Serve with rice or noodles.

Traditional Lasagna

Lasagna is a dish that I love, but don't make often because of how many leftovers I usually have. But when there's a crowd to cook for, it's a great option. This recipe turned out really well that it became my new go-to lasagna recipe.

Lamb Kofta

If you're looking for a quick and easy weeknight dinner, lamb koftas are a great choice. I serve these with a yogurt sauce, tomato cucumber salad, pita, babaganoush and roasted veggies for a complete meal. For an even easier option, stuff your pita with yogurt sauce, hummus, or your favorite spread, add the koftas and top with tomato cucumber salads or just sliced tomatoes.

Shrimp Scampi over Pearled Couscous

If you're looking for a quick weeknight dinner that requires little effort but packs a lot of flavor, this is it. It's like a traditional shrimp scampi, but I love that the couscous soaks up the sauce and becomes just as flavorsome. Serve with a salad and warm crusty bread.

Fish Tacos with Cilantro Lime Slaw

I have been making fish tacos for years, but this recipe has become a favorite. The slaw and chipotle mayo add so much flavor to the fish that you won't need more toppings.

Portuguese Peri Peri Chicken and Potatoes

I recently discovered this recipe and it has quickly become a weeknight favorite. There is so much flavor coming the sauce that it tastes great even without the cilantro yogurt sauce. If you're in a rush, feel free to skip that step and just make the chicken and potatoes with the peri peri sauce. Using chicken on the bone means that leftover will still be juicy the next day.

Midwestern Chili

This recipe comes from my friend who grew up in the Midwest. It's what I consider a very traditional American chili. We've made it ahead of time for camping trips and it has always been a success. It makes a great chili dog option too. It tastes even better on day 2.

Grilled Tandoori Style Chicken

My go to barbecue meat will most likely always be chicken thighs. Their flavor and general easy of grilling have won me over. Unlike chicken breast, if you lave these on for a minute or two too long, they will still be juicy and taste great. This recipe is another easy but very flavorful way to grill chicken. You can put the meat on skewers or just grill the chicken thighs straight on the grill.

Rotisserie Chicken Thai Curry

There are times when a rotisserie chicken, or leftover chicken, makes for delicious leftovers. This recipe is one of those times. Personally, I don't like rotisserie chicken on day 2, but if it's made like this recipe, you'll wish you had more chicken to use up. You can use this recipe as a guide and use whatever vegetables you have at home.

Zucchini & Lemon Pasta

The Pasta Queen has a TikTok/Instagram account that has had me interested in her recipes for a while now. She's an Italian woman living in the US and she shares a lot of different (mostly pasta) recipes. I was looking for a quick and easy dinner idea one night and I happened to have the ingredients to attempt to replicate her "Fettuccine Lemon & Zucchine". My friend had also made a variation of this recipe recently which turned out wonderfully. This is a very simple pasta but it great for a quick weeknight dinner.

Ina Garten's Skillet-Roasted Lemon Chicken

The more Ina Garten recipes I make, the more I realize she is always publishing the best recipes. I have said it before, but I have yet to make and Ina recipe I don't enjoy. This chicken was no exception. Because you butterfly the chicken, it cooks much more quickly than a traditional whole chicken so it can easily become a weeknight dinner favorite. While the chicken is roasting, you can prep any other dishes you want to serve with the chicken.
