My go to barbecue meat will most likely always be chicken thighs. Their flavor and general easy of grilling have won me over. Unlike chicken breast, if you lave these on for a minute or two too long, they will still be juicy and taste great. This recipe is another easy but very flavorful way to grill chicken. You can put the meat on skewers or just grill the chicken thighs straight on the grill.
Recipe from Feasting at Home
2 pounds chicken thighs (I used boneless, skinless)
For the Marinade:
1/2 cup plain whole milk yogurt
6 cloves garlic, minced
2 tablespoons lime juice
1 tablespoon olive oil
2 teaspoons kosher salt
1 tablespoon cumin
2 teaspoons ground coriander
2 teaspoons paprika
1 1/2 teaspoons ground turmeric
1/2 teaspoon cayenne (add more if you prefer spicy, this quantity will be pretty mild)
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground cardamom
In a bowl, whisk together the yogurt and all marinade ingredients. Add the chicken and allow to marinate for at least 30 minutes, or up to 48 hours.
Preheat your grill to medium-high. Make sure the grate is clean and greased.
Sear the chicken for 4 minutes, until it has grill marks and lifts off the grill easily (don't move it too soon). Flip and sear the other side. Once cooked through, remove from the grill and enjoy.
