The Pasta Queen has a TikTok/Instagram account that has had me interested in her recipes for a while now. She's an Italian woman living in the US and she shares a lot of different (mostly pasta) recipes. I was looking for a quick and easy dinner idea one night and I happened to have the ingredients to attempt to replicate her "Fettuccine Lemon & Zucchine". My friend had also made a variation of this recipe recently which turned out wonderfully. This is a very simple pasta but it great for a quick weeknight dinner.
Recipe adapted from The Pasta Queen
1/2 pound of pasta of your choice
1 1/2 tablespoons olive oil
1 large shallot or 1/2 a large onion, diced
2 medium zucchini, diced
1/2 cup pasta water, reserved from your cooked pasta
1 lemon, zested
juice of 1/2 a lemon
1 tablespoon chopped fresh mint
3/4 cup freshly grated Parmesan
salt & pepper, to season
Bring a pot of salted water to boil. Add pasta and cook until done, reserving 1/4 cup of pasta water before draining.
While the pasta is cooking, heat the olive oil in a larger pan. Add the shallot or onion and cook for a minute or two, then add the zucchini. Saute for 3 more minutes, then add 1/4 cup of your pasta water. Once the water has started to evaporate, add the lemon zest, juice and mint. Mix in the cooked pasta and toss to coat evenly. Add the Parmesan and toss. Once the cheese starts to melt, add more pasta water, if needed, to make the pasta a little creamier. Season with salt and pepper and enjoy.
