Greek Inspired Pie (Blatsaria)

This recipe is a loose interpretation of Blatsaria. I've adjusted to ingredients I usually have on hand to make this more accessible. The Greek flavors of the spinach, feta and dill make this recipe taste instantly recognizable. The dough comes together quickly, making this an easy recipe. The ingredients can be adjusted too. I used turnip greens because I had them on hand. You could use other greens or increase the spinach instead. Pin It Now!

Vegetarian Breakfast Casserole

I recently had my family over for brunch and decided to try this breakfast casserole recipe. It was a big hit and we didn't miss anything like bacon or sausage. I cut up and froze the leftover for some quick grab-n-go breakfasts later in the week.

Classic Creamed Spinach

I recently made this creamed spinach when I had some seemingly random ingredients left in my fridge before a vacation. This is a traditional creamed spinach recipe, like something you'd find at an American steakhouse. Feel free to make modifications based on what you have at home. You can use different onions or sub cream for the milk if needed.

Spinach and Cheese Strata

This is one of my favorite brunch recipes. You do most of the work the night prior and before your guests arrive all you have to do is bake it. Leftovers taste great too.

Spinach, Mushroom and Zucchini Quiche

Quiche is one of those great foods where you can use whatever vegetables you have laying around and still have a fantastic end result. I recently had a handful of mushrooms and half a bag of spinach sitting in the fridge and decided a quiche would be the best way to go. Feel free to use whatever vegetables you have on hand.

Spinach and Cherry Tomato Pasta

Living on my own I often look for simple recipes that can be made without much effort. This recipe is one of my go-to quick dinners for days when I really don't want to make anything too time consuming, but I still want a tasty dinner. If you ever feel like mixing it up, omit the spinach and add 1/4 cup chopped basil. That's my other go-to weeknight pasta dinner. Either way, this is a very simple and satisfying meal.

Vegetarian Tuscan Pasta

My mom is the one who deserves credit for finding this recipe. She was looking for vegetarian options and decided to try this one out. It turns out this is a delicious pasta dish that meat lovers and vegetarians will both be happy to eat. I consider this a main course. It's filling without making you feel overly full. Great for a summer night and full of flavor.

Simple Spinach and Artichoke Dip

I was in a rush to make a few appetizers a few weeks ago. It was a cloudy day so I wanted to make something warm, but I didn't want to make anything too labor intensive. After scrolling through various collections of "easy appetizers" and "quick appetizers" I decided to check Fine Cooking for some inspiration. I saw this dip and knew it was perfect. All you need to do is chop and mix some ingredients together and then bake the final product. Try to time the dish so it comes out of the oven around when you expect your guests to arrive. You could always prepare the dip ahead of time and just bake it later when you need it. Make up to one day prior to using and allow the dip to come to room temperature as you preheat your oven.

Spinach and Candied Walnut Salad

Every now and then I look for random recipes based strictly on what's in my fridge/pantry. Last night I had a bag of spinach and leftover blue cheese that I wanted to use up. So after looking at blogs and websites filled with the same salad (more or less) that used ingredients I didn't have at home, I was relieved to find this one! I tweaked the salad only by using apples instead of pears, either fruit would be great, and was really happy with the result. The candied walnuts were so easy to make and are a great snack, even on their own. I think I ate about half of them straight off the baking sheet. The dressing is nothing to brag about, but all the flavors come together really well when the salad is mixed.  You can chop everything into bit sized bit or just use the spinach leaves as-is and slices of fruit. It's also great because you can adjust the amount of cheese, fruit and walnuts based on your own preferences. I didn't follow the scale of this recipe since I made it for 2 people, so go ahead and play around with it. The recipe I'm posting is the original, made for more people
