I recently made this creamed spinach when I had some seemingly random ingredients left in my fridge before a vacation. This is a traditional creamed spinach recipe, like something you'd find at an American steakhouse. Feel free to make modifications based on what you have at home. You can use different onions or sub cream for the milk if needed.
Adapted from Salty Side Dish
2 tablespoons olive oil
1/2 cup finely diced white onion shallot
2 large garlic cloves, minced
24 ounces fresh spinach, or frozen spinach, thawed and rained
6 ounces cream cheese
1/2 cup fresh grated Parmesan cheese
1 teaspoon sugar
2 tablespoons milk
salt and pepper, to taste
Heat a large pan over medium heat. Warm the oil, then add the onions. Once fragrant and softened, add the garlic. Cook for a minute, until fragrant. Add the drained spinach and stir.
Cover your pan and cook the spinach for about 5 minutes, stirring occasionally.
Break the cream cheese in to a few chunks and add to the pan. Add the Parmesan, sugar, milk and season with salt and pepper. Stir and cook until the cream cheese has melted, about 5 minutes. Adjust your salt and pepper as needed and serve hot.
