Easy, Healthy Broccoli Soup



Last time I went grocery shopping I was a bit too optimistic and ended up with way too many veggies. I ended up freezing a head of broccoli, and had no clue what I would eventually make with it. We recently had a cold snap so broccoli soup suddenly sounded great. I found this recipe and couldn't believe how creamy the soup was without having any dairy in it (unless, like me, you sprinkle cheese on top). This is is very easy to make and makes about 3 minutes from start to finish.

Broccoli and Cauliflower Salad


I was looking for a salad that would be easy to transport and wouldn't get soggy if I made it ahead of time. I was bringing food to a friend's party and didn't have time the day of to do anything that required more than five minutes. Luckily, my mom's friend told me about this salad that she loves serving during the summer. I've had this as a main course before when I wasn't very hungry, but it goes great with any BBQ basics.


The dressing used in this salad can be altered for your preferences. I tend to like it on the creamy side and use more yogurt than my mom's friend. If you like the citrus kick feel free to add more lemon. I have also made this without the cranberries and nuts and have enjoyed that too. This salad will still be crunchy and delicious the next day.

Peanut and Sesame Noodles


I know I have more than enough Asian noodle dishes on this blog, but I keep coming across new ones that are also great, so you can take your pick. I chose this recipe since I actually had all the ingredients for the sauce in my pantry. Usually I find an Asian recipe and realize that I'm missing some key component and then opt against making it. This is a really easy noodle dish. It makes a great lunch if you have any leftovers as well.


In this recipe, the veggies are quickly cooked with the boiling pasta so that they are crisp tender. I often just use raw veggies in an Asian noodle salad, but decided to give this method a try. I actually liked the result, but you need to be careful to not overcook the veggies. If you are hesitant at all, just use raw peppers, carrot, cucumbers, or any other veggie you like in an Asian noodle dish.

Broccoli Beef


I absolutely love broccoli beef. It's one of the few Chinese take away dishes I actually enjoy (minus occasionally feeling horrible after eating Asian fast food). I decided I wanted to find a recipe that tasted restaurant made, but wasn't loaded with flavor enhancers or other mysterious ingredients. This one is really easy and turns out great every time I make it. I made this for dinner tonight and even got the approval of a 3 year old! It's hard to skip seconds and every time I "make extras for lunch" they magically vanish before the night is over. If you're looking for a quick, delicious stir-fry recipe, give this one a try.


The original recipe calls for garlic powder and ground ginger. I always replace these with fresh ingredients, but will list both options in the recipe. Keep in mind I have not taste tested both versions, but I have high hopes it would be delicious either way. The beef that you use can be whichever cut of meat you prefer. And if you actually have any leftovers, this dish reheats well.
