Roasted Cod with Lemon, Garlic & Parsley Crust


I was recently looking up a new way to prepare fish. I tend to make the same recipes and I wanted to mix it up. I found this recipe for a crusted cod and knew I had to try it. The preparation of the dish is very easy and the end result looks impressive and tastes great. Your cooking time will vary based on what cut of the cod you are working with. If it's a thinner cut (from the tail of the fish), cook for less time than listed in the recipe.

1 to 1.5 pounds cod fillet, 1.25" thick
1 cup plain panko breadcrumbs
3 tablespoons chopped fresh parsley
2 garlic cloves, crushed
zest from 1/2 a lemon
4 tablespoons butter, melted
squeeze of lemon juice (the juice from about 1/4 or 1/2 lemon)
salt and pepper
lemon wedges, for serving

Preheat your oven to 425F/220C. Lightly grease your baking sheet or shallow ovenproof dish. Season the cod with salt and pepper to taste.

In a bowl, mix together the breadcrumbs, parsley, garlic and lemon zest. Next, stir in the lemon juice and butter. Mix well, using your fingers if needed.

Lay your fish on the prepared baking sheet or dish. Press the breadcrumb mixture evenly on the fish, forming a crust. Bake for 20-25 minutes, until the crust has browned and the fish is cooked through and just flaking. Sevre immediately. Pin It Now!
