Italian Sausage with Peppers and Onions



I recently had a backyard barbecue where (as usual) I had too much food. I threw a few things in the freezer and decided I wanted to make something with the Italian sausages I had left over. They were the Trader Joe's chicken Sicilian sausages and they worked great in this dish. I always loved peppers and sausage  and this recipe is very easy, hard to mess up and the leftovers are still delicious. I had 2 red peppers at home when I made this, but feel free to use whatever variety you prefer.




Recipe from Spicy Southern Kitchen

1 tablespoon vegetable or olive oil
1 package Italian sausage (1 pound)
1 green pepper (or sub any other color), cut in to thin strips
1 red pepper (or sub orange or yellow), cut in to thin strips
2 sweet onions, cut in to half-moons
2 cloves of garlic, minced
1 tablespoon tomato paste
1 14.5 ounce can diced tomatoes
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes

Using a large pan over medium head, heat the oil. Once hot, add the sausages and cook until browned on all sides. Remove from heat and set aside. Sausages do not need to be cooked through yet.

Using the greased in your pan, add the peppers and onions to the pan, cooking over medium heat until softened. Stir in the garlic and cook for 1 more minute.

In the meantime, slice the sausages in to 1 or 1.5 inch pieces. Add the sliced sausages to the pan, along with the remaining ingredients. Stir and cook for 5 to 10 more minutes, until the sausage is cooked through and the sauce is thicker. Serve plain or on a hoagie roll and enjoy. Pin It Now!
