Avocado Pesto
A few years ago my mom made an avocado pesto that was delicious. I started looking for avocado pesto recipe with ingredients I had at home and found this one. It's a great sauce that is very easy to make. I call it a pesto only because it has some of the classic pesto ingredients, but it won't be exactly like a traditional pesto in flavor. It can also be used in many different ways. You can use is for a pasta, as a dip with veggies, or as a sandwich condiment. I am sure there are many more possibilities I haven't thought of. You could add grated Parmesan to the recipe too if you'd like but I enjoyed keeping this a little bit lighter.

Turkey Cacciatore
I've recently been eating what I consider lazy day meals (baked potato with cheese, pasta, etc...). Finally, after a week of my all-carb diet, I went out and bought tons of produce, meat, and other delicious things I had forgotten about. After coming home with a seemingly random mix of supplies, I realized I had everything to make this recipe, thanks to a quick google search.
This is a great, easy cacciatore recipe. The ingredients are simple, fresh, and come together perfectly in this Italian classic. The fresh basil is a must and adds more depth to the dish' overall flavor. You can use chicken or turkey, whichever you have at home will be good. I suggest eating this straight away, but leftovers will still be good the next day.

Pesto alla Genovese
The last of the basil was just picked from my mom's garden. She had 2 huge plants this summer that have provided more than enough basil for the summer and autumn. Before the weather got cool, my mom picked most of remaining leaves and decided we'd make pesto. She's made lots of pesto already this summer, but its a great way to use up any leftover basil and it is delicious.
I've experimented with different types of pesto in the past (such as pistachio pesto), but have never been that impressed. This recipe has the classic pesto taste I was looking for. If you have leftover, or if you double the recipe, it freezes well for later use. I like serving my tossed in whatever kinds of pasta I have at home. I keep it simple so the pesto flavor shines, but you can use it for whatever you like.
