Smitten Kitchen Brownies


I felt like baking recently, but also did not want to have to go to the grocery store. Yes, I was being lazy, but on the plus side, it did lead me to this delicious brownie recipe. I had everything at home to make these brownies and I typically love Smitten Kitchen recipes. I like my brownies plain, without any nuts or additional ingredients. These were the perfect afternoon treat!

3 ounces unsweetened chocolate, roughly chopped
1/2 cup (4 ounces) unsalted butter cut in to chunks, plus more for greasing your pan
1 1/3 cup sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon flaky sea salt (or 1/4 teaspoon table salt)
2/3 cup all-purpose flour

Preheat your over to 350F. Cut out parchment paper to line an 8"x8" baking form, extending the parchment paper along 2 sides (this will help you lift the brownies out of the dish later on). Grease the dish and the parchment paper.

Set a heat-proof bowl over a pot of simmering water. Add the chocolate and butter and mix until they have both melted. Remove from heat and add the sugar to the bowl, mixing it in thoroughly. Add the eggs, one at a time, followed by the vanilla and the salt. Using a wooden spoon or spatula, stir in the flour. Pour the batter in to the prepared baking dish and evenly spread it. Bake for 25-30 minutes, until and inserted toothpick comes out clean.

Let the brownies cool, then lift them out of the pan using the parchment paper if needed. Cut in to your desired shape and serve. Pin It Now!
