Stanley Tucci’s Pasta Fagioli


I recently made this soup and it's a wonderful meal in a bowl. There's protein and vegetables and feels like a complete lunch or dinner. Serve with crusty bread and enjoy. This also freezes well if you have leftovers.

Kale, Farro and Strawberry Salad



My friend and I went to the beach this past weekend and she surprised me with this absolutely delicious salad. I was lazy and packed simple snacks, like hummus, and salsa, while she made us a few great salads. I'm not typically a big fan of kale (in any form), but this salad was great! I finished my plate in minutes.The perk of this salad is that to ravels well since it's made with kale. It's won't get soggy and you can even keep it for the next day if you have extras.

Kale and Quinoa Salad with Parmesan


My sister made this salad over fourth of July weekend and it has been one of the few times that I actually liked kale. I keep trying to convince myself that I enjoy kale, but usually force myself to eat it and remind myself that it's healthy. This salad was actually delicious and gave me faith in kale again. Though I will probably not be adding kale to my usual rotation of foods, this recipe is a great way to sneak it in and stock up on vitamins.


The original recipe called for ricotta salata, but we used Parmesan. We also served extra grated Parmesan at the dinner table for anyone who wanted more (Which of course I did). If you're skeptical about kale, give this salad a try. And if you're still not convinced, the cheese really makes a huge difference too.

Spicy Grilled Kale


Before this week, I never thought kale would make it onto my blog. It was a food that I convinced myself was good, but I never really enjoyed it. I just ate it for the same reason it became so popular: it's really healthy. I'm glad I gave it another chance though. I now have a new appreciation for this super food and will keep trying out new variations. I'm sure there will be some disasters in this mission, but making really healthy food taste really good isn't always the easiest task.


It seems I have finally discovered a trick to enjoying kale. First, I made it spicy. I'm sure not all of you enjoy spicy food as much as I do, but it added a very welcomed kick to the kale (plus spicy food boosts your metabolism). The spice took away some of the "healthy" taste of the kale, but you can cut back on the heat if you want. Next, I grilled the kale until it had softened slightly. This combination of grilling and spicy created the first kale dish that I ever enjoyed. You can easily double this recipe as well if you're cooking for more people.
