These may not look very pretty, but they are a great cocktail meatball to serve when you're looking for something other than the often too-sweet jelly style meatballs or traditional marinara sauce. I wanted to try these when I had some friends coming over and they were a hit. Again, they're not the nicest looking, but my friends tend to trust what I make and were pleasantly surprised by these. You can roll out the meatballs a day prior to making this and have a quicker prep time the day you serve them.
Recipe from Genius Kitchen
1 pound ground
beef
½ cup
breadcrumbs
1/2 cup Parmesan
cheese
1 tablespoon
Italian seasoning
1 teaspoon
kosher salt
1 egg
¼ cup butter
2 minced
garlic cloves (more or less to your liking)
2
tablespoons flour (1 tablespoon for thinner sauce)
1 cup
chicken broth
Preheat your oven to 400F/204C.
Combine the beef, breadcrumbs, cheese, seasoning, salt and egg in a bowl. Roll in to cocktail meatball sizes pieces. Place on a baking sheet line with parchment paper or a silicone mat. Bake 15-20 minutes, until cooked.
While the meatballs are baking, melt the butter in a pan. Stir in flour until combined. Add the broth and cook until the mixture has thickened. Stir in the cooked meatballs and serve. Pin It Now!
