Soft Baked Chocolate Chip Cookies


I have always loved a soft baked chocolate chip cookie, but had never baked one that I loved. Recently my niece requested to bake chocolate chip cookies so I looked in to a few different recipes. I found this one and decided to give it a try. This instantly became my new go-to chocolate chip cookie recipe. They turned out wonderfully. Everyone who tried them was pleasantly surprised by how good they were (clearly my chocolate chip cookie reputation was mediocre prior to this). These turn out soft baked and thanks to the instructions, you actually know when to take them out of the oven to keep that chewiness of a soft baked cookie.




Recipe from Live Well Bake Often
Makes about 36 cookies

2 3/4 cups all purpose flour (spooned in to your measuring cup, not scooped)
1 teaspoon baking soda
1 teaspoon salt
1 cup (230 grams) unsalted butter, at room temperature
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs, room temparture
2 teaspoons vanilla extract
1 12-ounce package of semi-sweet chocolate chips (about 2 cups)

Whisk together the flour, baking soda and salt in a large bowl, Set Aside

In the bowl of a standing mixer fitter with the paddle attachment, cream the butter, brown sugar and granulated sugar, about 2 minutes. Add the eggs one at a time, then mix in the vanilla until thoroughly combined. Add the flour mixture on low speed and mix until just combine. Pour in the chocolate chips, mixing until they are evenly distributed.

Cover your bowl and allow the dough to chill at least 2 hours (you can also wrap the dough in plastic wrap and chill it overnight).

Preheat your oven to 350F/175C. Line 3 baking sheets with silicone mats or parchment paper. Roll dough in to 2-tablespoon sized balls and divide among the 3 baking sheets.

Bake each cookie sheet in a separate batch. Bake each sheet for 10-12 minutes, until the bottom edge just turns golden brown and the top of the cookie is set. Remove from oven and allow to cool.Continue with remaining baking sheets. Once cooled, you can store these in a air-tight container for up to 5 days. Pin It Now!
