Roasted Cauliflower Soup

After starting at a head of cauliflower, I decided it was time to make some soup. While I love the classic Alice Waters' recipe, I didn't have all the ingredients on hand. I found this recipe with very simple ingredients and gave it a try. It's a wonderful, cozy winter recipe.

Baba Ganoush with Fried Onions

While this is not your traditional baba ganoush, it reminds me of the dips we used to have when I was a kid. Some of you will be horrified by the ingredient list, but this one is a classic for me.
